5 Healthy Recipes for The Young Professional // Recipe 3

During my entire undergraduate career, the on-campus restaurant (yes, it was an actual restaurant) served Buffalo Chicken Wraps every Friday. It was more a part of my undergraduate experience that I care to admit ;) 

One day a week virtually ever student and staff member on campus would literally run to the restaurant (some of my friends would even leave class early) and wait in abnormally long lines just to order their buffalo chicken wrap. Sometimes they would run out of chicken before you reached the front of the line - those were the saddest days for sure.

***Honestly Hour: I really struggle with waiting in long lines, but let me tell you, these wraps were worth every second of the long wait. 

That's why when Victoria Sgro graciously shared her mouth watering Buffalo Chicken Wrap recipe I wept with joy.

Buffalo Chicken Wrap (serves 1)

INGREDIENTS:
1 tortilla or wrap of your choice
a handful of spinach
2 tablespoons shredded carrots
½ small seedless cucumber, sliced
½ cup cooked chicken, shredded
¼ cup Franks Red Hot Sauce
1 tbsp butter
drizzle of ranch*
 
INSTRUCTIONS:
  1. Visit ahintofgarlic.com for a homemade ranch recipe!
  2. Shred your chicken into small pieces. Melt your butter and hot sauce on the stove or in the microwave until melted, but not hot. Toss the shredded chicken in the sauce and set aside.
  3. Spread the spinach out in the center of the wrap and layer with the sliced cucumbers and shredded carrots. Top with the buffalo chicken and a drizzle of ranch.
  4. Fold over the long end of the wrap to cover the ingredients. Tuck in both ends and roll the wrap so everything is sealed tightly. BOOM! Delicious!
 
MAKE IT LUNCH:
  1. Keep your ranch on the side and drizzle it on right before eating to prevent the wrap from getting soggy. Wrap your buffalo wrap in a paper towel and aluminum foil to keep the moisture out while it’s in your lunch box!
  2. Pack this flavorful wrap with a side of veggies (celery, sliced cucumber, carrots, sweet peppers, bell peppers, etc.) and ranch! So fresh!
 
KEEP IT SIMPLE:
  1. Don’t have time to cook up chicken this week? Grab a plain rotisserie chicken from the grocery store. It makes for a yummy, juicy buffalo wrap when shredded!
  2. Mixing up your own ranch at home is a healthier alternative to the store-bought stuff. If making it from scratch feels a little too pro-chef for you, grab a packet of mix at the store. Look for one without anti-caking agents, fillers, and preservatives. Then mix it at home with some greek yogurt, mayo, and a splash of milk! Its way healthier than store-bought ranch, but less prep to fit into your busy schedule. That’s a win-win.
