5 Healthy Recipes for The Young Professional // Recipe 4

I think there are a few things will ultimately lead to world peace. In no particular order they are:

Coffee.
Guacamole.
Tacos.

I'm sure there are other things that will also contribute (policies, water, governments etc.)  - but to me, you can't get more pivotal than these three.

Blackened Shrimp Tacos
w/ Avocado & Lime Crema (serves 1)

INGREDIENTS:
8 medium shrimp (peeled, deveined, raw)
1-2 tsp blackening seasoning
2 taco-sized tortillas (corn, flour, or a blend)
½ a hass avocado
2 leaves of butter lettuce
¼ cup sour cream (or plain greek yogurt)
juice of ½ a lime
salt & pepper to taste
 
INSTRUCTIONS:
  1. Mix up your lime crema! Whisk together the sour cream, lime juice, salt and pepper. Keep in the fridge until ready to serve.
  2. Rinse and dry your raw shrimp. Toss in blackening seasoning (or a sprinkle of salt, pepper, and paprika will do!). Cook over medium heat in a drizzle of oil for a few minutes on each side - until they are pinkish and no longer translucent. Allow them to cool before assembling your tacos.
  3. Place a large leaf of butter lettuce in each tortilla shell. Layer with shrimp, sliced avocado, and a drizzle of your homemade crema.
 
MAKE IT LUNCH:
  1. Nobody likes a soggy taco. Placing your butter lettuce leaf inside the tortilla will keep it from soaking up the lime crema.
  2. Wrap your tacos tightly in aluminum foil to keep the sauce from dripping out and to help preserve your avocado. Alternatively, pack each component separately. You can keep your avocado from browning by leaving it in the skin after slicing, and wrapping it tightly in aluminum foil. Bring your crema in a small container, and assemble your tacos when you’re ready to eat! You can also heat your shrimp for a few seconds before building your tacos, if desired.
  3. Pack this in your lunch with a side of organic black beans. The protein will help you stay full longer, and you’ll also get a nice dose of iron!
 
KEEP IT SIMPLE:
  1. Skip the cooking time altogether and buy already cooked shrimp. Toss them with a little bit of oil and few spices, salt, and pepper. Or sub the shrimp for some shredded rotisserie chicken!
  2. We could all use a few more veggies in our life. Skip the tortilla and build your tacos on a few layered leaves of butter lettuce. Soon enough you’ll be known as the healthy one in the office.
